karukan is confection from Kyusyu.
made from rice flour powder, sugar, and grated Japanese yam.
Water is added to the mixture, which is then steamed.
It is like an elastic white sponge.

having made lots of mochi-sweets that reflect each season, we have one for this season, too.
It is called ‘uguisu-mochi’, and made to resemble the shape and color of uguisu.
